Broccoli Soup Recipe

This recipe yields about 4 to 5 BIG bowls.

This soup is an absolute favorite in my house. I got the recipe from a recipe book my grandma had. I never look at the recipe anymore to make this, I don't measure the ingredients anymore either, it turns out a little different every time but is always so tasty. Enjoy.

Ingredients for Making Broccoli Soup

  • 5 (bigger) stalks of broccoli
  • 4 cups of water
  • 1 stick of butter
  • 1 cup of celery chopped
  • 1/2 cup - 1 cup of yellow onion chopped
  • 1/3 cup flour
  • 2 - 3 table spoons of ground chicken bouillon
  • 1 cup of milk
  • salt & pepper to taste

Instructions for Broccoli Soup

  1. Cut up the broccoli (cut the stem too and cook those as well) place in a large pot with the 4 cups of water (you may need more or less water depending on how much broccoli you have, you do not want the water to the top, you will be using this water for your soup base. If it is too thick you can always ass water to the soup as it is cooking, I do this often). Cover with lid and cook until broccoli is tender.
  2. While the broccoli is cooking, in another large pot, melt the butter with the celery and onion and saute over medium heat until the onion and celery are tender. Add the salt and pepper now if you like.
  3. When the broccoli is done and ready, set aside. Add the flour and quickly whisk in with the butter mixture (will get clumpy - that is ok). Place a strainer over the pot with the butter and flour and strain the water in that pot, setting aside the broccoli. (Rinse and set aside the pot you cooked the broccoli in.)  stir until the clumps of flour and butter smooth out a little. Add the chicken bouillon, stir.
  4. Add all the broccoli and the milk, stir.
  5. Now you will need a blender and a ladle. Little by little blend until a consistency you prefer, the broccoli mixture and pour into the pot you set aside, heat the blended soup over medium heat until cooked down and thickened (if too thin) or add some water (if too thick) and heat through.

This soup is so good with rolls smothered in real butter.
