Fresh Kale Salad with Oranges and Strawberries
A surprisingly delicious salad using fresh kale, strawberries, and oranges from the Farmers Market. It only took about 20 minutes to make and so easy!
As for the picture, I think there are a couple of oranges left in there - Oh yeah, I see it in the back. I was so excited to try this, I forgot to take the picture until my second helping.
Ingredients
- Fresh Kale
- Fresh Strawberries
- Fresh Oranges
- Sunflower Seeds or Pine Nuts
- Shredded Cheese (optional)
How much you use of each will depend on how many your making the salad for.
Directions
- First prep the kale by either cutting or tearing the leaves from the thick piece of stock. We only used the amount of greens we'd need for the salad, which for two of us was about 4 handfuls. Then cut or tear into smaller pieces, wash it and either pat it dry or use a salad spinner to get most of the water off then put the kale in your salad bowl.
- We had one large orange and cut it in half. Squeeze as much of the juice from the orange as you can onto the kale greens. Yup. This is your dressing. Mix the greens and the orange juice together and every now and then while you're cutting the rest of the fruit up, give it a little stir, this will help soften the kale.
- Now this part is going to get a little sticky. You need to remove what's left of the orange from the skin, and remember you just squeezed the juice out so what's left of the orange isn't much, but just enough to put into the salad. If you don't want to do it this way, take a fresh orange, peel it, then cut it into bite sized pieces.
- Add the oranges to the kale and gently toss the mix. No, not across the room, just in the bowl.
- When your done with the oranges, wash however many strawberries you think you'll use for the amount of salad you're making. The ones I used were quite large, I think we used 8 or 9 strawberries and cut them into bite sized pieces.
- Add the strawberries to the mix and gently toss the salad again.
By now, with the juice of the oranges, the kale is a little softer and your ready to plate.
Once plated, add your sunflower seeds or pine nuts and top with the shredded cheese. You can also give a little sprinkle of pepper.
This kale salad was a delicious triumph, I kind of surprised myself, I'm sure you'll like it as much as we did. Enjoy.
Variations
If you have leftover chicken, you can cut that up into small pieces and put that down on the plate first, then add your salad on top.
